Summertime Blueberry Recipes

Make blueberry coffee cake or blueberry-lemon compote with these recipes provided by Pike Nurseries.

Whether eating them fresh out of the bucket or incorporating them into everyday cooking, gardeners can take full advantage of the fruits of their labor - quite literally when it comes to growing and picking their own blueberries. Fresh Blueberry Coffee Cake Cake ingredients: 2 cups flour 4 tsp. baking powder ¼ tsp. salt ½ cups butter ¾ cup sugar 1 cup milk 1 egg 1 tsp. vanilla 2 cups blueberries   Topping ingredients: ½ cup sugar ⅓ cup flour 1 tsp. cinnamon ¼ cup cold butte Instructions: Cream butter and sugar in a bowl of stand mixer. Spinach Mushroom Quiche

Try this delicious and healthy meat-free dinner.

I love the versatility of quiche. Eggs, cheese, and milk can be embellished with so many different combinations of meats and vegetables that you can make dozens of different varieties of quiche with the basic recipe. This recipe makes two pies, which is another plus because they freeze so beautifully and warm up so quickly that they are perfect for a quick meal on nights you don't want to cook, or easily pack up by the slice for taking to work. Our Pin of the Day for Wednesday, Feb. 1, is a beautiful soccer ball cake baked in honor of Coach Jay, a well-loved member of the Kennesaw community who died Friday after being struck by a vehicle while jogging Thursday morning. Balde's Mexican Ceviche

This delicious seafood dish requires no cooking at all.

In my latest foray into the kitchen, my husband Baldemar taught me this simple, delectable recipe for Mexican ceviche. This seafood dish is thought to have originated in Peru, but many Latin American cultures have added their own twists to its preparation. Ceviche is, essentially, raw seafood marinated in a citrus-based mixture, such as lime or lemon juice. The citric acid causes the proteins in the seafood to become denatured, cooking the fish without any heat. Balde, a native of Mexico, was raised near the coastal city of Tampico. As an avid fisherman, he enjoys preparing this dish with fresh red snapper. Depending on your preferences, you can also use halibut, tilapia, or a mixture of fish and shrimp. I personally have never been too proud of my cookie making skills unless, of course, I use the quick and easy pre-made dough from the grocery store. Even then, it helps if it is already cut into cookie shapes. However, this holiday season we went on a cookie baking spree. The results—we are all craving more homemade cookies. Check out our three favorite cookies, but only try them if you are ready to give up store bought cookies for good. In Mexico there is a nine day celebration from December 16 through December 24 called Las Posadas. It typically starts with a parade each night of children enacting the journey of Mary and Joseph that leads them to the stable where Jesus is born. The last house they visit each night is where the posada party is celebrated. The nine days represents the nine months of Mary’s pregnancy. This salad is served on Christmas Eve, the last night of Las Posadas. It is a combination of both fruit and vegetables which makes for a light and refreshing salad.
